Frischkäsebällchen

On some of my favourite markets you can buy little cream cheese balls from local cheese producers. Mainly the sell cream cheese balls covered with chives or scallions. As these cream cheese balls are quite expensive I started making my own.
As a cream cheese base I took one package of cream cheese (Philly), 200 g, and added 25 g of fresh ricotta, 25 g of mascarpone and 50 g of low fat curd. I only added some salt to taste because the ingredients I would roll the balls in later are very tasty itself.
I turned on my kitchen scale and put the bowl with my cream cheese on it. With a spoon I took little portions of 25 g to form the balls. Be aware: it's a sticky mess ;-)

For rolling I took a lot of different ingredients. Have a look at the photo. From row to row and left to right you can see:
1. row: chives, roasted black and white sesame, roasted pine nuts
2. row: roasted almonds (sliced), red bell pepper powder, pepper (black, green, white and red)
3. row: pecans and raisins (chopped for rolling), scallions, chopped pistachios
4. row: rosemary, walnuts and cranberries, mild chili salt with orange zest
What you can't see: For the cream cheese ball I rolled in pistachios I took some preserved cowberries (mountain cranberries) and mixed it with the cream cheese, then formed a ball and rolled it in chopped pistachios.
My favourites are still chives, scallions and pepper but It really enjoyed the nutty flavour of roasted pine nuts with cream cheese and the balls rolled in walnuts and cranberries.
But I had quite some more ideas for cream cheese balls:
* sprouts
* pumpkin seeds
* sunflower seeds
* dried tomatoes (chopped)
* arugula
* cress
* cumin
* caraway
It's really great for breakfast or brunch, especially for a colorful easter brunch! Just play with the ingredients and let creativity take you to some fancy cream cheese balls!

Die Schälchen sind zwar fürs Wälzen nicht geeignet, aber sehen hübsch auf dem Foto aus. :-)




Ich mache das auch manchmal, dann aber mit frischem Ziegenkäse. Und statt des Chilis, nimm doch Espelette!







Die Frischkäse-Bällchen sehen natürlich sehr lecker aus. Ich kannte sie bis jetzt nur in Öl eingelegt, aber so schmecken sie bestimmt viel frischer.
